CEBAS-CSIC Research Group on Quality, Safety and Bioactivity of Plant Foods studies the relationship between plan-derived food intake and human health and the effects of preharvest and postharvest factors on the quality and safety of plant-derived foods.
In the Department of Food Science and Technology at CEBAS-CSIC, we carry out R&D and Innovation activities in the area of food science and technology, with a strong background in the analysis of bioactive constituents and their metabolites (phenolic compounds, glucosinolates), phytochemistry, nutrition and metabolism, bioavailability, functional foods, metabolomics, posthavest technology, fresh-cut product processing and storage, food microbiology and microbial safety, to understand and guarantee the quality, safety and bioactivity of plant-derived food products.
