Applications are invited for a Postdoctoral Research Associate (PDRA) post in the Biopolymers Group of the Department of Nutritional Sciences, to work on a BBSRC-funded project in the area of how food structure and properties can impact on health. The PDRA post is for 24 months and will involve responsibilities associated with running food sensory and dietary intervention studies in humans and performing laboratory experiments using, for example, microscopy and in vitro digestibility assays. This project is focussed on understanding and manipulating food processing conditions to obtain food ingredient properties that provide controlled release of energy and nutrients from starch-rich foods. The data generated will inform the design and development of plant food ingredients for inclusion in food products such as baked goods and snack foods, with a particular emphasis on designing low glycaemic foods to aid prevention and management of type 2 diabetes. The appointee will play a key role in designing and conducting food sensory analysis and metabolic studies in human participants.
